Ingredients (view qty in metric system instead)
Gravy: 3 tbsp. butter 3 tbsp. all purpose flour 1.2 cup minced red bell pepper 1/4 cup minced onion 1 1/2 cups chicken broth 1/2 cup cubed Andouille sausage 1/4 tsp. cayenne pepper 1/8 tsp. salt 1/8 tsp. pepper 2 tbsp. minced fresh parsley
Pork: 2 tbsp. ground cumin 2 tbsp. ground coriander 1 tsp. salt 1/2 tsp. black pepper 24 ounces pork tenderloin 3 tbsp. olive oil
Directions
For Gravy: Melt butter in a small saucepan. Add flour and cook, stirring frequently, until dark golden, about 20 minutes. Add bell pepper and onion and cook 3 minutes. Gradually whisk in broth. Add sausage and cayenne. Simmer 5 minutes, stirring frequently. Season with salt and pepper. Stir in parsley.
For Pork: Mix cumin, coriander, salt and pepper in a medium bowl. Dredge pork in spice mix to coat. Heat oil in a large oven-proof skillet. Add pork and brown on all sides. Transfer skillet to oven and roast about 10 minutes until pork reaches 160 degrees. Transfer pork to a cutting board and let stand 5 minutes. Slice pork and serve with gravy.
Serves 4.
