Ingredients (view qty in metric system instead)
2 cups cooked, diced chicken 1 medium onion, peeled and chopped 1 cup grated sharp Cheddar cheese 3/4 cup canned tomato sauce 4 ounce can chopped green chilies 2 large cloves garlic, peeled and minced 1 1/2 tsp. paprika 1/2 tsp. cayenne pepper 1/4 tsp. salt 8 green bell peppers, stemmed and seeded, tops reserved
Directions
Preheat oven to 375 degrees. Stir together chicken, onion, Cheddar, tomato sauce, chilies, garlic, paprika, cayenne and salt in a large bowl. Stand the hollowed out peppers in a large shallow casserole dish. Spoon about 1/2 cup of the chicken mixture into each pepper. Place the reserved tops on the peppers. Bake about 50 minutes until peppers are tender and filling is heated through. Serve stuffed peppers immediately.
Makes 8 stuffed peppers.
