Ingredients (view qty in metric system instead)
3 tbsp. olive oil 1/2 cup minced onion 1 cup canned tomato sauce 2 cloves garlic, minced 1/2 tsp. dried oregano 1/4 tsp. Italian Seasoning 3/4 cup sliced fresh mushrooms 1/2 medium zucchini, thinly sliced four 6 inch corn or flour tortillas 1 cup grated mozzarella cheese 1/2 cup diced green bell pepper 1/2 cup diced red bell pepper 1/2 cup sliced black olives
Directions
Preheat oven to 350 degrees. Heat 2 tbsp. oil in a medium saucepan. Add onions and cook about 5 minutes until golden, stirring occasionally. Stir in tomato sauce, garlic, oregano and Italian seasoning. Simmer about 5 minutes until thickened. Heat remaining 1 tbsp. oil in a medium skillet. Add mushrooms and zucchini. Cook until tender, stirring occasionally, about 5 minutes. Place tortillas on a sheet pan. Bake 4 minutes until crisp. Spread 1/4 cup sauce over each tortilla, leaving a 1/2 inch edge all around. Sprinkle 1/4 cup mozzarella evenly over each pizza. Top pizzas with bell peppers, olives, mushrooms and zucchini. Bake about 5 minutes until cheese is melted.
Makes 4 pizzas.
