Southwestern Red Rice Pilaf Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
1 tbsp. butter
1 cup chopped onion
1 1/2 cups long grain rice
2 1/2 cups hot water
1/2 tsp. salt
1 cup prepared salsa
1/4 chopped fresh cilantro leaves

Directions
Melt butter in a medium saucepan over medium-high heat. Add onion and cook 3 minutes, stirring frequently. Add rice and cook 1 minute, stirring constantly. Add water and salt and heat to a boil. Reduce heat to low, cover and simmer 20 minutes. Remove pan from the heat and let stand, covered, 10 minutes. Stir in salsa and chopped cilantro and serve.

Serves 4 to 6.
