Southwestern Pinto Beans Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
16 ounce package dried pinto beans, picked through
6 cups water
8 ounces sliced bacon, chopped
2 cups chopped onions
3 cloves garlic, peeled and minced
two 8 ounce cans tomato sauce
2 1/2 tbsp. chili powder
1/2 tsp. crumbled dried oregano
1/2 tsp. salt
1/2 tsp. pepper
1/8 tsp. ground cumin

Directions
Place beans in a colander and rinse well. Transfer beans to a large bowl. Add water and let soak overnight. Transfer beans with water to a large pot and heat to a boil. Reduce heat and simmer 3 to 3 1/2 hours until beans are tender. In a large skillet cook bacon, onions and garlic over medium heat until bacon is crisp. Add bacon mixture, tomato sauce, chili powder, oregano, salt, pepper and cumin to beans. Simmer, stirring occasionally, 30 minutes.

Serves 8 to 10.
