Ingredients (view qty in metric system instead)
1 tbsp. vegetable oil 1 cup diced onion 1 cup diced red bell pepper 1 cup diced green bell pepper 1 tbsp. minced fresh garlic 1 pound ground chicken breast 14.5 ounce can diced tomatoes 2 tbsp. Worcestershire sauce 2 tbsp. minced chipotle chile in adobo 1/2 tsp. salt 1 tbsp. red wine vinegar 1/4 cup chopped fresh cilantro leaves 6 to 8 hamburger buns, lightly toasted
Directions
Heat oil in a large skillet over medium high heat. Add onion and bell peppers and cook 2 minutes, stirring constantly. Add garlic and cook 1 minute, stirring constantly. Add ground chicken and cook about 3 minutes until browned, breaking up clumps. Add tomatoes with juices, Worcestershire, chipotle and salt. Reduce heat to medium, cover and simmer 3 minutes. Stir in vinegar and cilantro and simmer 1 minute. Spoon the sloppy joe mixture into the buns and serve.
Serves 6 to 8.
