Ingredients (view qty in metric system instead)
Topping: 1 cup dried pinto beans, picked through and rinsed 2 cloves fresh garlic, peeled 8 thick slices bacon 1 small onion, peeled and finely chopped 2 medium tomatoes, diced 4 ounce can diced green chilies, drained 1/2 tsp. salt 1/4 cup chopped fresh cilantro leaves
Burgers: 1 1/2 pounds ground beef or chuck 1/2 tsp. pepper 4 hamburger buns, split and toasted 1 cup grated sharp Cheddar cheese
Directions
For Toppings: Combine the pinto beans with water to cover in a large saucepan. Heat to a boil over medium high heat. Boil beans 3 minutes. Remove pan from the heat, cover and let stand 1 hour.
Drain water from the pan. Add the garlic and 4 cups water. Heat to a boil over medium high heat. Reduce heat and simmer about 75 minutes, stirring occasionally, until beans are tender. Meanwhile, cook the bacon strips in a large skillet until crisp and browned. Drain bacon on paper towels. Stir the onions, tomatoes, chilies and cilantro into the beans.
For Burgers: Prepare grill. Mix together the ground beef or chuck, salt and pepper in a large bowl. Shape meat into 4 patties. Place patties on an oiled grill rack. Cover and grill about 4 minutes per side for medium rare. Transfer the burgers to the buns and spoon the bean mixture over. Sprinkle each burger with 1/4 cup Cheddar. Top each burger with 2 slices bacon and serve.
Makes 4 burgers.
