Ingredients (view qty in metric system instead)
2 cups dried pinto beans, picked through and rinsed 4 whole cloves 1 medium onion, peeled 2 bay leaves 2 cloves garlic, peeled and crushed 4 ounce can diced green chilies, drained 1 1/2 tbsp. lemon juice 1 tbsp. red wine vinegar 1 tbsp. olive oil 1 tbsp. minced fresh cilantro leaves
Directions
Place beans in a medium saucepan with water to cover. Make slits in the onion. Insert the cloves and bay leaves into the slits. Add the spiced onion to the beans along with crushed garlic and diced chilies. Heat to a boil. Reduce heat, cover and simmer about 3 hours until beans are tender, stirring occasionally. Discard onion. Stir in lemon juice, vinegar, oil and cilantro. Serve hot or cold.
Serves 4.
