Ingredients (view qty in metric system instead)
4 large cloves garlic, minced 2 medium onions, peeled and finely chopped 1 cup prepared chili sauce 1 tbsp. tomato paste 1 canned chipotle Chile 2 pounds lean beef stew meat, cut into 3/4 inch cubes 1 tbsp. ground cumin 1 tsp. salt 3 tbsp. vegetable oil, divided 1 cup beef broth
Directions
Preheat oven to 350 degrees. Stir together garlic and onions in a small bowl. Combine chili sauce, tomato paste and chipotle in a food processor and blend until smooth. Stir together beef, cumin and salt in a medium bowl. Stir to coat meat. Heat 2 tbsp. oil in a large saucepan. Add meat and brown. Reserve meat. Add garlic mixture to pan and cook until tender, stirring frequently, about 5 to 6 minutes. Add beef, chili sauce mixture and broth and stir to combine. Transfer stew to a large casserole dish. Cover and bake until beef is tender, stirring occasionally, about 90 minutes.
Serves 6 to 8.
