Ingredients (view qty in metric system instead)
Burger: 1 1/2 pounds ground beef 4 slices pepper jack cheese 4 hamburger buns, split and toasted lettuce leaves sliced red onion
Chipotle Mayonnaise: 1/2 cup mayonnaise 1 tbsp. canned chipotle chilies in adobo, pureed 1/2 tsp. salt
Corn Black Bean Salsa: 15 ounce can black beans, drained and rinsed 16 ounce package frozen, thawed corn kernels, drained 29 ounce can diced tomatoes, drained 1/2 cup chopped fresh cilantro leaves 4 ounce jar pimientos, drained and diced 1 tbsp. lime juice 1 jalapeno pepper, stemmed, seeded and minced 1 tsp. ground cumin 1/2 tsp. salt
Directions
For Burgers: Prepare grill. Form the ground beef into 4 patties, about 6 ounces each. Place the patties on an oiled grill rack and grill to desired doneness. Place 1 slice pepper jack cheese on top of each burger. Grill an additional 1 minute until cheese is melted. Divide burgers between buns and top with chipotle mayonnaise, corn black bean salsa, lettuce and red onion.
For Chipotle Mayonnaise: Stir together mayonnaise, chipotle puree and salt in a small bowl.
For Corn Black Bean Salsa: Stir together black beans, corn kernels, tomatoes, cilantro, pimientos, lime juice, jalapeno, cumin and salt in a medium bowl.
Makes 4 burgers.
