Ingredients (view qty in metric system instead)
1/4 cup olive oil 12 ounces zucchini, sliced 1/4 inch thick 1 large red onion, peeled and thinly sliced 8 ounces fresh mushrooms, sliced 1 large red bell pepper, stemmed, seeded and thinly sliced 1 large yellow bell pepper, stemmed, seeded and thinly sliced 1 large green bell pepper, stemmed, seeded and thinly sliced 3 cloves garlic, minced 1 tsp. dried thyme 6 large eggs 1/2 cup heavy or whipping cream 1 1/2 tsp. salt 1 1/2 tsp. pepper 4 cups cubed day-old french bread, crusts removed 2 cups grated swiss cheese 8 ounces cold cream cheese, diced
Directions
Preheat oven to 350 degrees. Butter a 13x9 inch glass baking dish. Heat oil in a large pot. Add zucchini, red onion, mushrooms, bell peppers, garlic and thyme. Cook about 15 minutes until vegetables are tender. Cool slightly. Whisk together eggs, cream, salt and pepper in a large bowl. Stir in bread cubes, swiss cheese, cream cheese and vegetables. Pour into prepared dish. Bake about 45 minutes until bubbly at edges and browning on top. Let stand 10 minutes before serving.
Serves 8 to 10.
