Ingredients (view qty in metric system instead)
two 2 1/2 pound chickens, cut into eighths, wings and backs reserved for another use 1/2 cup fine dry breadcrumbs 1/4 cup all purpose flour 1 tbsp. pepper 3/4 tsp. salt 3 tbsp. olive oil
Directions
Preheat oven to 400 degrees. Combine bread crumbs, flour, pepper and salt in a large bag and toss to mix. Add a few chicken pieces and toss to coat. Transfer coated chicken pieces to a plate. Repeat coating with remaining chicken pieces. Heat the oil in a large, deep skillet over medium-high heat. Add coated chicken pieces and cook until golden. Transfer the browned chicken pieces to a large casserole dish. Bake 15 minutes until chicken is golden brown on 1 side. Turn chicken pieces over and bake an additional 20 minutes until cooked through. Serve immediately.
Serves 4 to 6.
