Ingredients (view qty in metric system instead)
3 pounds chicken pieces 2 packages dry Italian salad dressing mix 3 tbsp. all purpose flour 2 tsp. salt 1/4 cup lemon juice 2 tbsp. butter, room temperature oil for frying 1 cup milk 1 1/2 cups dry pancake mix 1 tsp. paprika 1/4 tsp. pepper 1/2 tsp. ground sage
Directions
Stir together salad dressing mix, flour, salt, lemon juice and butter in a small bowl until a paste forms. Brush the paste all over the chicken pieces. Transfer the seasoned chicken pieces to a large bowl. Cover and refrigerate chicken 3 hours.
Preheat oven to 350 degrees. Pour oil into a deep skillet to a depth of 2 inches and heat to 425 degrees. Place milk in a medium bowl. Stir together pancake mix, paprika, pepper and sage in a pie plate. Working in batches, dip each chicken piece into the milk then dredge in the pancake mix until well coated. Fry the chicken about 4 minutes per side until lightly browned. Place the chicken pieces in a single layer in a large shallow pan. Bake chicken about 35 minutes until cooked through.
Serves 4.
