Southern Style Turkey Breast and Pecan Stuffing

Ingredients (view qty in metric system instead)
3 to 5 pound fresh or frozen, thawed turkey breast 1 tbsp. vegetable oil 14.5 ounce can chicken broth 1/2 cup chopped onion 1/2 cup chopped celery 4 tbsp. butter 4 cups packaged cornbread stuffing mix 16 ounce can sliced peaches, drained and chopped 1/2 cup chopped pecans
Directions
Preheat oven to 325 degrees. Place the turkey breast in a small roasting pan and brush all over with oil. Combine broth, onion, celery and butter in a large saucepan and bring to a boil over medium heat. Reduce heat to low and simmer 5 minutes. Ass the cornbread stuffing, peaches and pecans and toss to blend. Spoon the stuffing mixture around the turkey. Bake turkey about 1 hour 45 minutes until the temperature reaches 170 degrees. Transfer the turkey to a platter and tent with foil. Let turkey stand 10 minutes before slicing and serving with stuffing.
Serves 6 to 8.
