4 to 6 pounds chicken pieces 4 cups buttermilk 1 cup self rising flour 3/4 tsp. salt 1/4 tsp. garlic powder 1/4 tsp. cayenne pepper 1 cup butter 1/2 cup honey 1/2 cup chopped pecans vegetable oil for frying
Directions
Combine the buttermilk and chicken pieces in a large bowl. Cover and refrigerate 90 minutes.
Stir together the flour, salt, garlic powder and cayenne in a large, shallow bowl. Remove the chicken from the buttermilk and dredge in the flour mixture to coat. Transfer coated chicken to a sheet pan lined with wax paper. Let chicken stand 20 minutes.
Melt butter in a small saucepan over low heat. Stir in honey and bring to a boil. Stir in pecans and simmer 15 minutes. Heat 3/4 inch oil in a large skillet to 375 degrees. Fry chicken in batches, about 7 minutes per side, until crisp , golden brown and cooked through. Drain fried chicken on paper towels. Transfer chicken to a serving plate and drizzle the honey pecan mixture over. Serve immediately.
Serves 6 to 8.
