Ingredients (view qty in metric system instead)
Sundae: 1/2 cup + 3 tbsp. salted roasted peanuts, coarsely chopped 3 tbsp. Southern Comfort whiskey 1 cup butterscotch sauce (recipe below) 1 pint chocolate ice cream
Sauce: 1 cup brown sugar 1/4 cup light corn syrup 1/5 cup butter 1/2 cup heavy or whipping cream 1 1/2 tsp. vanilla extract 1/4 tsp. fresh lemon juice
Directions
Sauce: Combine sugar, corn syrup, and butter in a saucepan and bring to a boil, stirring to sissolve sugar. Boil to 280 degrees using a candy thermometer. Remove from heat and stir in cream, vanilla and lemon juice. Stir until smooth. Can be kept 3 weeks, covered and refrigerated.
Sundae: Stir 1/2 cup peanuts and southern comfort into sauce. Cook over low heat until heated through. Scoop ice cream into dishes and spoon sauce over. Sprinkle 3 tbsp. peanuts and garnish with whipped cream if desired.
Makes about 4 sundaes.
