Ingredients (view qty in metric system instead)
2/3 cup milk 2 catfish fillets, about 6 ounces each 1/4 cup all purpose flour 1/4 cup yellow cornmeal 1/4 cup minced pecans vegetable oil for frying 1 tbsp. butter 3 green onions, sliced 1/4 cup chopped pecans 3 tbsp. dry white wine 1 tbsp. lemon juice
Directions
Place milk in a large, shallow saucepan. Place the catfish fillets in the pan in a single layer. Cover and simmer about 5 minutes on medium low heat until fish is almost cooked through. Meanwhile stir together flour, cornmeal and pecans in a shallow pie plate. Transfer the catfish fillets to the flour mixture and turn to coat. Pour vegetable oil to a depth of 1/2 inch in a large skillet. Heat oil over medium high heat. Add catfish and fry about 30 seconds per side until golden brown. Drain the catfish on paper towels. Meanwhile, melt butter in a small skillet over medium high heat. Add green onions and pecans and cook 2 minutes, stirring frequently. Stir in wine and lemon juice and heat to a simmer. Divide the catfish fillets between 2 plates and spoon sauce over. Serve immediately.
Serves 2.
