Ingredients (view qty in metric system instead)
2 tbsp. melted butter 1/3 cup sugar 1/4 tsp. salt 3 large eggs, beaten to blend 1 cup light corn syrup 1 tsp. vanilla extract 1/2 tsp. almond extract 2/3 cup shredded sweetened coconut 1 unbaked 9 inch pie shell
Directions
Preheat oven to 375 degrees. Blend together butter, sugar and salt in a medium bowl. Stir in eggs, corn syrup, vanilla extract and almond extract and mix well. Sprinkle coconut evenly over the bottom of the pie shell. Pour filling over coconut. Bake about 40 to 50 minutes until filling is set. Transfer pie to a rack and cool completely. Serve slices of pie with whipped cream or ice cream if desired.
Serves 6 to 8.
