8 ounce package uncooked fettuccine noodles 1/2 tsp. vegetable oil 1/4 cup olive oil 2 dozen large raw shrimp, peeled and deveined 1 tbsp. minced red onion 1 tbsp. minced fresh garlic 6 medium tomatoes, peeled, seeded and diced 1/3 cup dry white wine 1/3 cup chopped fresh cilantro leaves 2 tbsp. lemon juice 1/2 cup heavy whipping cream 6 tbsp. butter, diced 1/4 tsp. salt 1/4 tsp. pepper
Directions
Heat a large pot of lightly salted water to a boil. Add vegetable oil and fettuccine. Boil, stirring frequently, until pasta is just done. Drain pasta well. Heat olive oil in a large skillet over medium high heat. Add shrimp and cook about 2 minutes per side until just pink. Transfer shrimp to a plate and tent with foil. Add red onion and garlic to the skillet. Cook, stirring, 1 minute. Add tomatoes, wine, cilantro and lemon juice. Boil about 2 to 3 minutes until reduced by half. Add cream and boil about 3 minutes until reduced by half, stirring frequently. Remove the pan from the heat and gradually whisk in butter. Add salt, pepper, shrimp and cooked fettuccine and toss to coat. Divide shrimp and pasta between plates and serve immediately.
Serves 4.
