Ingredients (view qty in metric system instead)
1/2 cup butter 1/2 cup peeled, finely chopped Vidalia onion 1/2 cup finely chopped celery 1 pound lump crabmeat, picked through 1 1/2 tbsp. lemon juice 8 saltine crackers, coarsely crushed 1/4 cup dry sherry dash Tabasco sauce 1/4 tsp. salt
Directions
Preheat oven to 350 degrees. Melt butter in a large skillet over medium heat. Add onion and celery to the skillet and cook about 2 minutes until softened. Pour vegetable mixture into a large bowl and let cool. Meanwhile, toss together crab and lemon juice in a separate bowl. Add crushed saltines, sherry, Tabasco and salt to the vegetable mixture. Fold in crab. Divide the crab mixture between 8 scallop shells or shallow 3 ounce baking dishes. Bake about 20 minutes until lightly browned and heated through. Serve deviled crab immediately.
Serves 8.
