Sophisticated Stuffed Tomatoes with Bean Salad

Ingredients (view qty in metric system instead)
15 ounce can 3 or 4 bean salad 1/4 cup chopped celery 1/4 cup chopped red onion 3 tbsp. chopped red bell pepper 4 large tomatoes 2 tbsp. prepared mayonnaise 1 tbsp. buttermilk 2 tsp. chopped fresh chives 2 tsp. chopped fresh parsley leaves 1 tsp. minced fresh dill 1/8 tsp. pepper
Directions
Drain canned bean salad, reserving 2 tbsp. juice Toss together bean salad, celery, red onion and bell pepper in a large bowl. Whisk together reserved bean salad liquid, mayonnaise, buttermilk, chives, parsley, dill and pepper in a small bowl. Pour mayonnaise mixture over bean salad and toss to coat. Cut a 1/4 inch thick slice from both ends of tomatoes. Hollow out tomatoes, leaving a 1/2 inch shell. Stuff hollowed tomatoes with bean salad and serve.
Serves 4.
