Ingredients (view qty in metric system instead)
Pie: 3 quarts fresh strawberries, rinsed and stemmed, divided 1 1/2 cups sugar 6 tbsp. cornstarch 2/3 cup water red food coloring one 10 inch baked deep dish pie shell
Topping: 1 cup heavy or whipping cream 1 1/2 tbsp. dry instant vanilla pudding mix
Directions
For Pie: Mash enough of the berries in a large bowl to equal 3 cups. Stir together the sugar and cornstarch in a medium saucepan. Add mashed strawberries and water and mix well. Cook, stirring, over medium heat until mixture comes to a boil. Cook, stirring, 2 minutes. Remove pan from the heat and stir in food coloring. Pour mixture into a large bowl and refrigerate until lukewarm, stirring occasionally. Fold in the remaining strawberries. Mound the filling into the prepared pie shell. Refrigerate pie 2 to 3 hours until set.
For Topping: Beat cream in a medium bowl to soft peaks. Add pudding mix and beat to stiff peaks.
Slice pie and serve with dollops of topping.
Serves 8 to 10.
