Ingredients (view qty in metric system instead)
1/2 cup peanut oil 3 1/2 to 4 pounds chicken pieces(breasts, thighs, legs) 2 cups peeled, chopped onion 1/2 cup creamy peanut butter 1/4 tsp. cayenne pepper 1/2 tsp. salt 2 cups water chopped roasted peanuts
Directions
Heat peanut oil in a large skillet over medium high heat. Add chicken pieces and cook about 25 minutes until browned and tender, turning occasionally. Transfer chicken to a platter and tent with foil. Discard all but 2 tbsp. drippings from skillet. Add onion to skillet and cook over medium heat until tender, stirring frequently, about 5 minutes. Stir in peanut butter, cayenne and salt. Whisk in water and heat to a simmer. Return chicken pieces to the skillet and simmer until sauce is slightly thickened. Divide chicken between plates and spoon sauce over. Sprinkle with chopped roasted peanuts and serve immediately.
Serves 4 to 6.
