Ingredients (view qty in metric system instead)
1 1/2 pounds ground beef 1 1/4 cup crushed taco flavored chips 10.5 ounce can black beans, drained and rinsed 8 ounce can corn kernels, drained 1/2 cup minced green onions 1/2 cup fine chopped red bell pepper 5 ounce can evaporated milk 1 large egg 1 tbsp. chili powder 2 tsp. salt 1 tsp. ground cumin 2 tbsp. vegetable oil 1/4 cup water
Directions
Combine beef, crushed taco chips, black beans, corn kernels, green onions, bell pepper, evaporated milk, egg, chili powder, salt and cumin in a large bowl. Mix until well blended. Form the beef mixture into 5 to 6 individual loaves. Heat oil in a large skillet over medium heat. Add the meatloaves to the skillet and brown about 2 minutes per side. Add water to the skillet. Cover and reduce heat to medium low. Simmer meatloaves about 14 to 18 minutes until cooked through.
Serves 5 to 6.
