Ingredients (view qty in metric system instead)
1/2 small onion, peeled and halved 1 large clove garlic, peeled and chopped 1/2 cup chili sauce 2 large canned chipotle chilies in adobo, chopped 2 tbsp. peanut oil, divided 1 tbsp. fresh lime juice 1 tbsp. dark brown sugar 1 1/2 tsp. ground cumin 1/8 tsp. salt 1 1/2 pounds flank steak
Directions
Combine onion and garlic in a food processor. Blend until minced. Add chili sauce, chipotles, 1 tbsp. peanut oil, lime juice, sugar, cumin and salt. Process until smooth. Transfer to a 13x9 inch baking dish. Place steak in the dish and turn to coat. Cover and refrigerate at least 3 hours.
Heat remaining tablespoon of peanut oil in a large skillet over medium high heat. Add beef with marinade to skillet. Cook about 8 minutes, turning several times, for medium rare. Transfer steak to a cutting board and thinly slice. Drizzle with marinade from skillet and serve.
Serves 4.
