Skillet Brandied Apricot and Pecan Pork Chops

Ingredients (view qty in metric system instead)
1/4 cup water 1/4 cup honey 8 dried apricot halves, cut into strips 4 boneless pork loin chops, about 6 ounces each 1/4 tsp. salt 1/4 tsp. pepper 1/4 cup all purpose flour 2 tbsp. butter 16 pecan halves 2 tbsp. brandy
Directions
Combine water and honey in a small saucepan and bring to a boil. Add apricots and boil 1 minute. Remove the pan from the heat. Cover and let apricots stand 1 hour. Season pork chops on both sides with salt and pepper. Place the flour in a pie plate. Dredge the pork chops in the flour to coat, shaking off excess. Melt butter in a large skillet over medium heat. Add pork chops and pecans to the pan and cook pork 5 minutes per side, stirring pecans frequently. Add the apricot mixture and brandy and bring to a boil. Reduce the heat to low. Cover and simmer pork about 10 minutes until tender and cooked through. Divide the pork chops and pecans between 4 plates. Heat the pan juices to a boil. Boil about 1 minute until slightly thickened. Spoon the apricot sauce over the chops and serve.
Serves 4.
