Ingredients (view qty in metric system instead)
4 cups fresh or frozen, thawed corn kernels 1 cup grated Cheddar cheese 8 ounces cream cheese, softened 7 ounce can diced green chilies, drained 2 tsp. chili powder 2 tsp. ground cumin pinch crumbled dried thyme
Directions
Preheat oven to 350 degrees. Butter a medium cast iron skillet. Combine corn kernels, Cheddar, cream cheese, green chilies, chili powder, cumin and thyme in a large bowl. Stir until well combined. Bake about 30 minutes until bubbly. Serve hot.
Serves 6 to 8.
