Ingredients (view qty in metric system instead)
3/4 cup peanut oil 4 1/2 tbsp. fresh lime juice 3 tbsp. minced fresh ginger 3 large cloves garlic, chopped 2 large jalapenos seeded and chopped 1 tbsp. oriental oyster sauce 2 tsp. grated lime peel 1 tsp. salt 32 raw large shrimp peeled, deveined 16 bamboo skewers soaked at least 2 hours in water or metal skewers
Directions
Whisk together oil, lime juice, ginger, garlic, jalapenos, oyster sauce, lime peel and salt. Add shrimp and stir to coat. Cover and refrigerate 1 to 2 hours. Prepare grill. Put 2 shrimp on each skewer. Grill 1 1/2 to 2 minutes per side. Garnish with lime wedges and cilantro sprigs.
Makes 16 skewers.
