Ingredients (view qty in metric system instead)
4 pork loin chops, about 6 to 8 ounces each 1/4 cup peanut oil 8 cups shredded green cabbage 1/2 cup chopped onion 1 cup water 1 cup apple juice 1/2 tsp. rubbed sage 1/2 tsp. salt 1 cup half and half 1/2 tsp. Dijon mustard 1 tbsp. all purpose flour 1 tsp. paprika
Directions
Heat peanut oil in a large skillet over medium high heat. Add pork chops and brown on both sides. Meanwhile, combine cabbage, onion, water, apple juice, sage and salt in a large, deep skillet or pot. Place browned pork chops on top of cabbage. Cover and simmer 30 minutes over medium low heat.
Transfer chops to a plate and tent with foil. Whisk together half and half, Dijon and flour in a small bowl until smooth. Stir into cabbage and simmer, stirring, until liquid is thickened and bubbly. Spoon the cabbage mixture onto a platter, sprinkle with paprika and place pork chops on top. Serve immediately.
Serves 4.
