Ingredients (view qty in metric system instead)
18 baguette slices cut on the diagonal vegetable oil for frying 18 medium shrimp(about 21-25 size)peeled and deveined
Avocado Cream: 1 large avocado, peeled, pitted and pureed 1/4 cup sour cream 1 1/2 tbsp. heavy or whipping cream 1 tsp. minced cilantro 1 tbsp. lime juice 1/8 tsp. minced garlic 1/8 tsp. salt
Directions
Heat oil to 350 degrees in a fryer or deep skillet. Fry baguette slices in hot oil until browned. Drain on paper towels. Spread 1 tbsp. avocado cream on each toast and top with 1 shrimp. Serve immediately.
Avocado Cream: Stir together avocado puree, sour cream, whipping cream, cilantro, lime juice, garlic and salt in a small bowl.
Makes 18 pieces.
