Ingredients (view qty in metric system instead)
1 1/2 tbsp. olive oil 1 1/2 cups sliced fresh fennel bulb 1/2 pounds large peeled, deveined raw shrimp 1 tbsp. minced garlic 1/3 cup dry vermouth 3 tbsp. orange juice 1 tsp. finely grated orange peel
Directions
Cook fennel with oil in a skillet until beginning to soften, about 5 minutes. Add shrimp and garlic and cook 1 minute. Cover skillet and cook shrimp until just pink, about 2 minutes. Add vermouth, orange juice and peel. Cook, uncovered, 3 minutes. Serve over rice or cooked pasta if desired.
Serves 2.
