Ingredients (view qty in metric system instead)
1 tbsp. butter 2 tbsp. peeled, finely diced carrot 1/4 cup finely chopped onion 1/2 cup finely chopped fresh white mushrooms 8 medium shrimp, peeled and deveined 4 ounces boneless, skinless cod fillet 1 large egg yolk 1/2 tsp. salt 1 tsp. soy sauce 2 tsp. sugar 4 cups vegetable oil
Directions
Combine butter, carrot, onion and mushrooms in a small skillet over medium heat. Cook about 5 minutes, stirring frequently, until onions are softened. Remove the skillet from the heat and cool vegetables slightly. Combine shrimp and cod in a food processor. Pulse until finely chopped. Transfer the shrimp mixture to a medium bowl. Stir in the vegetable mixture, egg yolk, salt, soy sauce and sugar until well combined. Cover and refrigerate 1 hour.
Heat oil in a large deep skillet to 250 degrees. Form the shrimp mixture into four, 1/2 inch thick cakes. Fry shrimp cakes about 2 minutes per side until golden brown and cooked through. Drain shrimp cakes on paper towels. Serve hot.
Makes about 4 shrimp cakes.
