Ingredients (view qty in metric system instead)
3 pounds whole pork butt 2 tbsp. vegetable oil 6 ounces dark beer 1 cup white wine vinegar 1 cup ketchup 1/2 cup worcestershire sauce 4 tbsp. molasses 1/4 cup brown sugar 1 tbsp. pepper 1 1/2 tsp. ground allspice 1 1/2 tsp. ground coriander 1 1/2 tsp. cayenne pepper 2 bay leaves 1 tsp. dry thyme 1/4 tsp. chili powder 1 tbsp. chopped onion 2 cloves garlic, minced 3 to 4 cups chicken broth
Directions
Sear pork with oil in deep stewpot. Stir in beer, vinegar, ketchup, worcestershire, molasses, sugar, spices, onion and garlic. Add enough broth to cover pork. Bring to a boil. Simmer, covered, 14 to 16 hours, adding more broth if necessary to keep pork moist. Shred meat. Reduce liquid in pot by 1/2. Stir in meat.
Makes 4 to 6 portions.
