Ingredients (view qty in metric system instead)
5 slices bacon, chopped 1 1/2 cups diced potato 1/2 cup finely chopped onion 3/4 cup clam juice 2 1/2 cups milk 1/8 tsp. cayenne pepper 4 ounces peeled, deveined, chopped shrimp 8 ounces medium scallops, quartered 1 tsp. salt 8 ounces lump crabmeat, picked over 2 tbsp. chopped fresh cilantro, divided 2 tbsp. chopped fresh chives, divided
Directions
Cook bacon in a medium pot until crisp. Drain bacon on paper towels. Pour off all but 1 tbsp. drippings from pot. Stir in potatoes, onions and clam juice. Cover and simmer about 8 to 10 minutes until potatoes are tender. Stir in milk and cayenne and bring to a simmer. Add shrimp, scallops and salt and simmer until shellfish is just cooked through, about 3 minutes. Stir in crabmeat, 1 tbsp. cilantro and 1 tbsp. chives. Simmer 1 minute. Transfer to bowls and garnish with remaining cilantro and chives.
Serves 4.
