Ingredients (view qty in metric system instead)
Crepe Batter: 2 cups all purpose flour 1 large egg, beaten to blend 3 tbsp. sugar 1/2 cup club soda 1 1/2 cups milk 1 tbsp. melted butter
Seafood Filling: 1 tbsp. vegetable oil 2 ounces chopped lobster meat 2 medium shrimp, shelled, deveined and chopped 1 ounce chopped crabmeat 1/2 ounce sliced roasted peppers 1/8 tsp. chopped fresh parsley leaves 1/8 tsp. chopped fresh cilantro leaves
Directions
For Batter: Combine flour and sugar in a medium bowl. Beat in egg, club soda and milk. Cover and refrigerate 30 minutes. Melt butter in a large nonstick skillet. Swirl butter to coat pan. Ladle 1/4 cup batter into skillet, tilting pan to evenly coat bottom with batter. Cook crepe about 1 1/2 minutes per side. Transfer crepe to a plate. Repeat cooking with remaining batter. Makes enough batter for 12 crepes.
For Filling: Heat oil in a large skillet. Add lobster, shrimp, crabmeat, roasted peppers, parsley, cilantro, salt and pepper. Cook about 3 minutes, stirring frequently, until shrimp is cooked through. Makes enough filling for 1 crepe.
Place seafood filling in 1 crepe and fold over. Serve immediately.
