Ingredients (view qty in metric system instead)
2 tbsp. butter 1/2 cup chopped onion 1/2 cup chopped green bell pepper 4 large eggs 4 tbsp. chopped fresh cilantro leaves, divided 1/2 tsp. salt 1/4 tsp. pepper four 6 inch flour tortillas 1 1/4 cups grated Monterey Jack cheese prepared salsa
Directions
Preheat broiler. Butter a broilerproof pan. Melt butter in a medium skillet over medium heat. Add onion and bell pepper and cook about 6 minutes, stirring frequently, until tender. Whisk together eggs, 2 tbsp. cilantro, salt and pepper in a small bowl. Add to skillet and cook, stirring constantly, until 2 minutes until set. Spoon egg mixture down the center of the tortillas. Roll up tortillas and place seam side down in the prepared pan. Toss together Monterey Jack and remaining 2 tbsp. cilantro in a small bowl. Sprinkle cheese mixture evenly over tortillas. Broil about 2 minutes until cheese is melted and golden. Serve immediately with salsa.
Serves 2 to 4.
