Ingredients (view qty in metric system instead)
1/3 cup butter 2 tbsp. sugar 1 tbsp. all purpose flour 5 ounce can evaporated milk 1 1/2 tsp. baking powder 1/8 tsp. salt 2 large eggs, beaten to blend 1/4 cup diced pimientos two 10 ounce packages frozen corn kernels, thawed
Directions
Preheat oven to 350 degrees. Lightly grease a 6 cup glass loaf pan. Melt butter in a medium saucepan over medium heat. Whisk in sugar and flour. Cook, whisking constantly, 1 minute. Gradually whisk in milk until thickened and smooth. Remove pan from heat and whisk in baking powder, salt and eggs. Whisk until smooth. Stir in pimientos and corn kernels. Pour mixture into prepared loaf pan. Bake about 45 minutes until top is golden and mixture is heated through.
Serves 4 to 6.
