Savory Sausage and Potato Breakfast Custard Casserole

Ingredients (view qty in metric system instead)
1 pound peeled and thinly sliced russet potatoes 1/2 tsp. salt, divided 1/4 tsp. pepper, divided 8 ounces ground pork sausage 1/3 cup chopped roasted red peppers 3 large eggs 1 cup milk 3 tbsp. chopped green onions prepared salsa
Directions
Preheat oven to 375 degrees. Butter a 9 inch casserole dish. Layer half the potatoes in the bottom of the prepared dish and season with salt and pepper. Brown the sausage in a large skillet. Drain sausage well. Crumble half the browned sausage over potatoes in the baking dish. Lay remaining potato slices over sausage and season with remaining salt and pepper. Top with remaining sausage and chopped red peppers. Whisk together eggs, milk and green onions in a medium bowl. Pour egg mixture over potatoes. Cover dish with foil and bake 35 to 45 minutes until potatoes are tender. Uncover and bake an additional 5 to 10 minutes. Serve hot with salsa on the side.
Serves 4 to 6.
