Ingredients (view qty in metric system instead)
2 tbsp. olive oil 8 ounces hot Italian sausage, casings removed 1 small red onion, peeled and thinly sliced 1 tsp. ground cumin four 6 inch corn tortillas 1/2 cup shredded Monterey Jack cheese 1/2 cup chopped fresh cilantro 1 1/3 cups shredded lettuce
Directions
Heat oil in a large skillet over medium-high heat. Add sausage and cook until browned, breaking up clumps of meat. Add onion and cumin, Cook about 8 minutes, stirring frequently, until onion is tender and sausage is cooked through. Remove from heat. While sausage is cooking, char tortillas on a hot grill or over a gas flame. Wrap tortillas in foil and let stand 2 minutes. Divide sausage mixture between tortillas. Top each with 2 tbsp. Monterey Jack cheese, 2 tbsp. cilantro and 1/3 cup shredded lettuce. Serve immediately.
Makes 4 soft tacos.
