Ingredients (view qty in metric system instead)
1 1/2 pounds ground beef 1/2 cup uncooked long grain rice 2 large eggs 1/2 tsp. salt 1/2 tsp. pepper 4 cups prepared sauerkraut, drained 1 cup heavy or whipping cream 2 tbsp. all purpose flour
Directions
Combine ground beef, rice, eggs, salt and pepper in a medium bowl. Blend beef mixture well and form into balls. Layer 1/4 of the sauerkraut into a Dutch oven. Top with some of the meatballs. Repeat layering twice more, ending with sauerkraut. Add enough water to almost cover. Bring mixture to a boil over medium high heat. Reduce heat , cover and simmer casserole until meatballs are cooked through and rice is tender, about 90 minutes. Whisk together cream and flour in a small bowl until smooth. Stir the cream mixture into the casserole and simmer an additional 5 minutes. Serve hot.
Serves 6 to 8.
