Ingredients (view qty in metric system instead)
1 1/2 cups sugar 3/4 cup white vinegar 1/4 cup vegetable oil 4 cups prepared sauerkraut with juices 1 1/2 cups diced celery 1 medium sweet onion, peeled and thinly sliced 3/4 cup diced green bell pepper 2 ounce jar diced pimientos 1 tsp. celery seed 1/2 tsp. pepper
Directions
Combine the sugar, vinegar and oil in a small saucepan. Bring to a boil over medium heat, stirring frequently. Reduce the heat to low and simmer 5 minutes, stirring occasionally. Combine the sauerkraut with juices, celery, onion, bell pepper, pimiento, celery seed and pepper in a large bowl and toss to blend. Pour the vinegar mixture over the salad and toss well to coat. Cover and refrigerate overnight. Drain the juices from the salad before serving.
Serves 8 to 10.
