Ingredients (view qty in metric system instead)
Crust: 1 1/2 cups graham cracker crumbs 1/4 cup sugar 1/2 cup softened butter
Filling: 16 ounces cream cheese, softened 1 cup sour cream 2 tbsp. cornstarch 1 cup sugar 2 tbsp. softened butter 1 tsp. vanilla extract
Topping: 3/4 cup sour cream 1/4 cup powdered sugar
Directions
For Crust: Preheat oven to 375 degrees. Combine graham crumbs, sugar and butter in a medium bowl. Stir until well combined. Press crust mixture into the bottom of a 9 inch pie plate. Bake 8 minutes until edges are lightly browned. Transfer crust to a rack.
For Filling: Beat together cream cheese, sour cream, cornstarch and sugar in a large bowl until sugar dissolves. Add the butter and vanilla and blend until smooth-do not overmix. Pour filling over the prepared crust. Bake 30 to 35 minutes until a knife inserted 1 inch from edge comes out clean. Transfer cheesecake to a rack and cool 1 hour.
For the Topping: Stir together sour cream and powdered sugar in a small bowl until smooth. Spread mixture evenly over the top of the cheesecake. Refrigerate cheesecake at least 2 hours before serving.
Makes one 9 inch cheesecake.
