Ingredients (view qty in metric system instead)
Salmon: 1/4 cup butter 1 tbsp. fresh lime juice 1 tbsp. grated lime peel 1 tsp. Old Bay Seasoning 2 cups soft fresh breadcrumbs 2 cloves garlic, minced 1/2 cup chopped fresh parsley 1/2 cup chopped fresh basil 1/2 tsp. salt 1/2 tsp. pepper four 8 ounce pieces salmon
Sauce: 1/3 cup heavy or whipping cream 1/3 cup sour cream 2 tbsp. chopped fresh chives 2 tbsp. chopped fresh basil 1 tbsp. minced fresh parsley 1 tsp. fresh lemon juice
Directions
For Salmon: Preheat oven to 400 degrees. Butter a large baking sheet. Melt butter in a large skillet. Add lime juice and peel, Old Bay seasoning, bread crumbs and garlic. Cook, stirring frequently, until breadcrumbs are crisp and golden. Remove from heat and stir in basil and parsley. Season salmon with salt and pepper. Coat with bread crumb mixture on all sides. Place coated salmon pieces on prepared pan and bake 15 to 20 minutes until salmon is cooked through. Serve with sauce.
For Sauce: Whisk together cream, sour cream, chives, basil, parsley and lemon juice in a small bowl until smooth.
Serves 4.
