Ingredients (view qty in metric system instead)
4 slices white bread 1 7 1/2 to 7 3/4 oz can salmon, drained and flaked 2 eggs 1/4 tsp. salt 1/2 tsp pepper Dill weed 1 tsp. salad oil 1/2 cup mayonnaise 1 tsp. prepared mustard 1 10oz package frozen chopped spinach
Directions
In a large bowl, tear bread into small pieces; add salmon, eggs, salt, pepper and 1/8 tsp. dill weed; mix well. Shape salmon mixture into 8 croquettes. In large skillet over medium heat, heat slald oil, cook patties in hot oil 5 minutes or until browned on both sides, turning once. Meanwhile, prepare sauce; in a 1 quart saucepan over low heat, heat mayonnaise, mustard and 1/8 tsp. dill weed until warm. Keep sauce warm. Remove croquettes from skillet; keep warm. Prepare spinach as directd on package. Drain. Place croquettes on spinach; garnish with dill sprigs if desired. Serve with sauce.
