Ingredients (view qty in metric system instead)
1 pound skinless salmon fillet, cut into 1/4 inch pieces 4 green onions, chopped 1 tbsp. drained capers 1 tbsp. fresh lemon juice 1 tsp. dried crumbled tarragon 1 tsp. Dijon mustard 1 tsp. white horseradish 1/2 tsp. salt 1/2 tsp. pepper 3 tbsp. prepared mayonnaise 1/2 cup fine dry breadcrumbs 1 tbsp. butter 8 slices toasted bread or hamburger buns 4 tomato slices 4 lettuce leaves
Directions
Combine salmon pieces, onions, capers, lemon juice, tarragon, Dijon, horseradish, salt, pepper, mayonnaise and breadcrumbs in a large bowl. Mix well and form into four 1 inch thick patties. Melt butter in a large skillet over medium-high heat. Add salmon patties and cook until firm, browned and crusty, about 3minutes per side. Place patties on toasted bread or buns and top with tomato slices and lettuce leaves.
Serves 4.
