Ingredients (view qty in metric system instead)
Graham Cracker Base: 3/4 cup graham cracker crumbs 3 tbsp. sugar 3 tbsp. melted butter or margarine
Brownie Layer: 1/2 cup butter or margarine, softened 2 ounces chopped unsweetened chocolate 1 cup sugar 2 large eggs 1/2 tsp. vanilla extract 1/2 cup all purpose flour 1/2 cup milk chocolate chips
Topping: 1 1/2 cups mini marshmallows
Directions
For Graham Cracker Base: Preheat oven to 350 degrees. Line the inside of an 8x8 inch baking pan with foil, leaving a 2 inch overhang. Lightly grease foil. Stir together graham cracker crumbs, sugar and melted butter or margarine in a small bowl until evenly moistened. Press mixture evenly into the bottom of the lined pan. Refrigerate base while preparing brownie layer.
For Brownie Layer: Combine butter or margarine and unsweetened chocolate in a medium saucepan and melt over low heat. Stir until smooth. Remove from heat and whisk in sugar, eggs and vanilla. Stir in flour just until blended. Spread brownie batter evenly over graham cracker base. Bake 20 to 25 minutes until a toothpick comes out clean. Remove pan from oven and sprinkle milk chocolate chips over the top of the brownies. Let brownies stand 5 minutes until chocolate melts. Spread melted milk chocolate evenly over brownies.
For Topping: Preheat broiler. Sprinkle mini marshmallows over warm brownies, covering the milk chocolate completely. Broil brownies 5 to 6 inches from heat for about 30 seconds until marshmallows are golden brown. Transfer brownies to a rack and cool completely.
Remove brownies from pan using foil overhang as an aid. Remove foil and cut brownies into bars with a lightly oiled knife.
Makes about 12 brownies.
