Ingredients (view qty in metric system instead)
1/2 cup golden raisins 1/4 cup dark rum 3 large eggs 1 1/2 cups canned pumpkin puree 2/3 cup sugar 3/4 tsp. ground cinnamon 1/2 tsp. salt 1/4 tsp. ground nutmeg 1/8 tsp. ground cloves 1 cup half & half 9 inch partially baked pie shell
Directions
Combine raisins and rum in a small bowl and let stand 1 hour or overnight. Preheat oven to 425 degrees. Drain raisins, reserving rum. Place rum in a medium bowl and whisk in eggs, pumpkin, sugar, cinnamon, salt, nutmeg and cloves. Gradually whisk in half & half until smooth. Scrape into prepared crust and sprinkle raisins over top. Bake 10 minutes. Reduce oven to 350 degrees and bake pie 35 to 40 minutes longer until filling is set. Cool on a wire rack.
Serves 8 to 10.
