Ingredients (view qty in metric system instead)
1 cup raisins 1/2 cup water 1/4 cup rum 3/4 cup sugar 1/2 cup butter or margarine, softened 1 large egg 1 3/4 cups all purpose flour 1/2 tsp. baking soda 1/2 tsp. baking powder 1/4 tsp. salt
Directions
Combine raisins, water and rum in a medium saucepan. Heat to a boil. Reduce heat and simmer 20 to 30 minutes until liquid is evaporated. Preheat oven to 375 degrees. Beat together butter or margarine and sugar in a large bowl until light and fluffy, about 3 minutes. Beat in egg. Stir in flour, baking soda, baking powder and salt. Stir in raisins. Drop dough by rounded tablespoonfuls, 2 inches apart onto ungreased cookie sheets. Bake 9 to 11 minutes until light brown. Cool cookies on racks.
Makes about 2 1/2 dozen cookies.
