Ingredients (view qty in metric system instead)
1 pound dried Great Northern beans, picked through and soaked overnight in water to cover. 2 medium onions, peeled and chopped, divided 2 cloves garlic, minced, divided 6 cups chicken broth 6 cups diced cooked chicken 1 cup prepared salsa 1 tbsp. vegetable oil 2 fresh jalapeno chiles, stemmed, seeded and minced 2 chili peppers, stemmed, seeded and diced 1 1/2 tsp. dried oregano 2 tsp. ground cumin 1/4 tsp. cayenne pepper 1/2 tsp. salt sour cream shredded Monterey Jack cheese
Directions
Drain the beans and transfer to a large pot. Add half the onions, half the garlic and broth. Heat to a boil. Reduce heat and simmer, stirring frequently, until beans are tender, about 2 hours. Stir in chicken and salsa. Meanwhile, heat oil in a large skillet. Add remaining onions and garlic, both peppers, oregano, cumin and cayenne. Cook until onions are softened, stirring frequently. Stir in salt. Stir mixture into chili and simmer 60 minutes. Garnish with sour cream and Monterey Jack.
Serves 4.
