Ingredients (view qty in metric system instead)
3 1/2 pound boneless pork loin 2 tbsp. dried rosemary 4 tbsp. olive oil 1 tbsp. coarse ground pepper 1 tbsp. balsamic vinegar 1 tsp. kosher salt
Directions
Preheat oven to 350 degrees. Place pork loin, fat side up, in a roasting pan. Roast pork 30 minutes. Crush together rosemary, olive oil, pepper, vinegar and salt in a small bowl. Spoon the rosemary mixture over pork. Roast an additional 30 minutes until internal temperature reaches 160 degrees. Remove pork from oven and tent with foil. Let stand 10 minutes. Slice meat and arrange on a platter. Pour pan juices over and serve.
Serves 6 to 8.
